Lettuce Fajitas

I love fajitas and these lettuce fajitas are great when you want or need a low calorie lunch! These are even great as a snack!

Wraps or lettuce?

Normally, I would automatically put my fajitas in a tortilla wrap. Usually, I would use Weight Watchers wraps. Sometimes I just want to use majority of my calories on breakfast & dinner! Which is fine as I can have these to curb my huber at lunch time!  

Sweet Gem lettuce

When browsing the salad aisle at my local supermarket, I am always fascinated by the sheer quantity of different salad leaves available. And each has its own unique taste. When thinking about this recipe, I knew that I needed a salad leaf that was not only a practical shape to replace a wrap. But also had a complimentary taste to the fajita recipe. I think (and I hope you agree) that I was successful in choosing the Sweet Gem lettuce. The large leaves hold lots of the delicious filling and the crisp, sweet taste adds a nice element to the overall dish. 

Where does it come from?

Interestingly, Sweet Gem lettuce was originally cultivated in France. However, nowadays it can be found growing throughout Western Europe and along the Californian coast. Although some brands will wash the lettuce before packaging, please make sure you wash and dry it thoroughly before you use it.

Make your own sour cream

If you really wanted to, you can make your own soured cream for your lettuce fajitas quite easily. All you need to do this is double cream, natural yoghurt, white wine vinegar, chives and salt.

All you do with these ingredients is simply put the double cream, natural yoghurt and white wine vinegar in a jar or some kind of container and shake it really well. Once you’ve done this, cover the jar or tub with a paper towel and rubber band and leave it overnight in a cool place, but not in the fridge. The next day, the sour cream should have thickened and you should be able to spoon it out the jar. You can then add your salt and chives and serve!

Ingredients

  • 2 Sweet gem lettuce leaves

  • 1 Chicken Breast, sliced

  • 1/4 Green Bell Pepper, sliced

  • 1/4 Red Bell Pepper, sliced

  • 1/4 Yellow Bell Pepper, sliced

  • 1 tbsp Sour Cream

  • 1tsp JD Seasonings Fajita seasoning

  • Low calorie spray oil

Directions

  • Spray a pan with spray oil, and cook the chicken until heated through.
  • Add the mixed peppers and cook until softened.

  • Serve inside the leaves of the sweet gem lettuce and use these as wraps. Top with sour cream and enjoy!
