Veggie Brunch

This vegetarian slimming friendly veggie brunch is great if you fancy lunch for breakfast, or breakfast for lunch! This meal keeps me full and helps prevent me from snacking between meals.

I think the more colourful your plate looks, the more appealing it seems. It’s always been the case for me that I’d much rather try something new. Especially if it was easy on the eye. That’s why I love adding the lots of veg to my plate. I feel like it stands out among the beige!

In my opinion, one of the easiest speed foods to add to a meal is spinach. You can eat it either cooked or raw, and you can put a boat load in the pan and it still shrivels down to look like you’ve barely put any in.

Why did Popeye eat spinach?

We all know the infamous Popeye and his love for the magical veg that is spinach. But how did this come about? Why was it that spinach turned Popeye from a regular man into a super strong Olive Oyl saving superhero? Unfortunately, as you may know spinach doesn’t have the same affect on the likes of you and I when eating it. As it turns out, in 1870 a German chemist named Erich von Wolf was examining the amount of iron contained in spinach. When he recorded his findings, he accidentally misplaced a decimal point. This changed the iron content by a monumental amount! While a 100g serving of spinach in fact contains 3.5 milligrams of iron, Erich von Wolf published that it actually contained 35 milligrams!

After this incorrect number was printed, the nutritional value of spinach became legendary! The error wasn’t corrected until 1937, when someone checked the numbers again. By this time though, the damage had already been done!

When Popeye was created in 1981, it was suggested due to this comical error that he ate spinach to improve his strength. Popeye even helped increase the consumption of spinach in America by a third!

Why you should eat more asparagus

You may have noticed that I have included asparagus in this meal. I am personally trying to add more asparagus to my diet as I have recently learnt the amazing benefits it can have.

Although asparagus is well known for making your wee smell funny, it also has some great health benefits such as helping you lose weight and helping you beat bloat. It is also packed with other nutrients as well as being full of antioxidants.

Asparagus contains lots of soluble and insoluble fibre, which means if you’re trying to lose weight it’s a good choice of veggie to have. Because your body digests fibre slowly, it keeps you feeling full in between meals.

Ingredients

  • 2 Eggs

  • 50g Asparagus

  • 50g Courgette

  • 1 Small sweet potato

  • Handful of spinach

  • Salt & pepper

  • 1tsp Paprika

Directions

  • Preheat your oven to 180 degrees.
  • Cut your sweet potato into chip like shapes. spray with spray oil and season with salt and pepper and cook in the oven for 30 minutes, giving them a shake half way through.
  • Spray a pan with spray oil, chop the asparagus and courgette, cook these until softened.
  • Spray a separate pan with spray oil, scramble the eggs to your preference.
  • Season the veg with paprika and serve along with the eggs and sweet potato fries, and enjoy your delicious veggie brunch!
