Chicken Wrapped in Parma Ham

This has to be one of my favourite meals growing up, the chicken, the cheese, the parma ham. It’s a delicious combination of flavours! It takes a simple chicken breast and gives it a restaurant feel.

Which cream cheese to use?

In this recipe, I use the Philadelphia Lightest, purely because 99% of the time (more like 80%) I’m trying to eat more healthily and lower my calorie intake. The Philadelphia Lightest is great as there are only 29 calories per 30g! Not only that, but it manages to maintain the great creamy taste! If you wanted to use full fat cream cheese then the original Philadelphia tastes amazing!

Is Parma Ham healthy?

Parma Ham is high in protein and free amino acids, giving it a high overall digestibility. It’s also very rich in oleic acid, a healthy monosaturated omega-9 fatty acid. Slivers of Parma Ham contain many vitamins and minerals: namely B1, B6, B12 and PP (also known as Niacin and a form of B3) plus phosphorus, zinc, iron and selenium.

It’s also notable what Parma Ham doesn’t contain. According to the Consortium’s strict regulations, colouring agents or preservatives such as nitrites and nitrates aren’t allowed in production. (Lovefood.com)

Ingredients

  • 2 Chicken Breasts

  • 120g Philadephia Lightest

  • 6 Slices of Parma Ham

  • 1 Pack of Mediterranean Vegetables

Directions

  • Preheat your oven to 180 degrees
  • Slice each chicken breast lengthways and fill with 60g each of Philadelphia
  • Wrap each chicken breast with 3 slices of Parma Ham and cook on a baking sheet for 30 minutes.
  • Serve with your favourite veg or side
