Love food with a bit of a kick? This creamy cajun chicken pasta will give you that, plus it’s a great comfort food meal for those cosy nights in! You can easily make this recipe vegetarian if you wish, simply replace the chicken with a meat alternative such as Quorn pieces!

Comforting Carbs

I actually created this recipe in the summer, however just knew that it would make the perfect winter warmer! There’s not much better than sitting in on a cold evening, fire on & eating a big bowl of pasta in front of the TV! This recipe is absolutely perfect for this, keeping you feeling full and satisfied!

I used conchiglie pasta in this particular recipe, however any type of pasta will be fine! I think tagliatelle would be so delicious for this as well! Personally, as much as I like tagliatelle and spaghetti, I always manage to slop it down my front by the time I’ve finished, so I tend to stick to the smaller shaped pasta! I think I need a bib!

Seasoning

I can’t stress enough how important the seasoning is for this recipe! Without it, you’re basically just making cream cheese and pasta, and that’s not nearly as delicious as a cajun kick now is it!! Creamy Cajun Chicken Pasta

Ingredients

  • 4 x Chicken Breasts

  • 400g Mushrooms, chopped

  • 180g Light Cream Cheese

  • 2tbsp Garlic Puree

  • 2tbsp Tomato Puree

  • 1tbsp Cajun Seasoning (use code JESSGETS20 for 20% off JD Seasonings)

  • 1tbsp Paprika

  • 350g Uncooked Pasta

  • 100g Grated Mozzarella

  • 350ml Chicken Stock

Directions

  • Bring a pan of water to boil and add in your pasta. Cook for about 20 minutes, until soft.
  • Meanwhile, chop your chicken breasts into chunks and fry in a large pan with spray oil until browned.
  • Add in your mushrooms, garlic, tomato puree, cajun seasoning, paprika & chicken stock. Mix so that the chicken is coated.
  • Add in your pasta and cream cheese, then mix in until it has all melted and you’re left with a creamy consistency.
  • Stir in the grated mozzarella last until it’s melted & stringy.
  • Serve into 4 portions, share with family/friends or keep & freeze for another day!
