Biscoff Baked Oats

This is great if you fancy something sweet for breakfast. I love Biscoff, and if I can add it to any meal and it still be slimming friendly, then I will! In this case, I have added the sweet surprise in the middle to create a lava cake effect.

It’s best to use a mini casserole dish like this one when cooking your baked oats.

Biscoff baked oats

If you follow my Instagram, you may have gathered that I am utterly obsessed with Biscoff spread! I can remember the first time I was offered a Lotus biscuit to dunk in my cup of tea, and I turned it down because it looked a little plain tasting. It’s fair to say I think that was one of my greatest regrets in life, as if I’d simply accepted, I would have discovered my love for Biscoff a lot sooner.

Behind the Biscoff

Lotus Biscoff started in 1932 in Lembeke, Belgium. Jan Boone Sr. (the baker) used natural ingredients to create the caramelised biscuit.

He called it Lotus after the flower that symbolises purity.  The company is still family-owned in its home town. Although it was initially invented to complement your coffee, the caramelised biscuit is meant to enhance the flavour of the coffee.  

In 1990, Lotus teamed up with a company named The Gourmet Center. This company provided food to airline companies in the United States. The joint company name was Corona-Lotus. Not to worry though, this has nothing to do with the global pandemic of 2020. I know that some may think that this was part of a ‘conspiracy’, however I’ll be most upset if Biscoff was no longer available. So leave it be.

The company Corona-Lotus Inc. became a 100% subsidiary of the Belgian Lotus Bakeries Group officially in 2009, however The Gourmet Center continues to sell Lotus biscuits to the airline industry in the United States.

Ingredients

  • 40g Oats

  • 1 Egg

  • 100g Fat free yoghurt

  • 1tsp Sweetener

  • 1tsp Vanilla essence

  • 3/4 tsp Baking Powder

  • 2 tsp Biscoff topping sauce

  • Low calorie spray oil

  • Add an optional Lotus Biscuit for some crunch!

Directions

  • Preheat your oven to 180 degrees.
  • Blend your oats until they make a powder
  • Add your yoghurt, egg, sweetener and vanilla essence in with the blended oats and mix well.
  • Spray an oven proof dish with spray oil and pour you mixture in.
  • Take 1 tsp of the Biscoff topping sauce and push it into the middle of the mixture.
  • Put in the oven for around 30 minutes, or until it is brown.
  • Drizzle 1tsp of Biscoff topping sauce this on top when serving, along with a biscuit.
