No Chicken Nuggets & Chips

This is a great fakeaway! Sometimes as a vegetarian I found that what I can order from takeaways is quite limited, however, this nuggets and curry fakeaway hits the spot perfectly! This recipe is also Vegan friendly!

When thinking about this recipe, I knew I wanted to re-create the nuggets and curry vibe.

So what makes them vegan?

To put it simply, they took out the egg white and milk protein. They use these in their regular crispy nuggets, however.

The great thing about the vegan nuggets is that they’re low in saturated fat. Per 100g of these delicious nuggets, there are only 0.3g of saturated fat. Comparing this to the regular crispy nuggets which are 0.8g of saturated fat per 100g, I wouldn’t say that it was a monumental difference, however every little helps!

To conclude

I think the great thing about this recipe is that there is a little bit of everything in one bowl. The chips, pepper and nuggets with the curry sauce on top needs no explanation. If you wanted to serve this as an alternative to takeaway night, no fancy presentation is needed for it look irresistible.

This meal is also incredibly filling. This means that you can get that food coma feeling without having to worry about going over your daily syns. I must say, this one is a personal favourite of mine.

Ingredients

  • 6 Quorn vegan nuggets

  • 200g Potatoes (I use Maris Piper)

  • 70g Mixed sliced peppers

  • JD Seasonings Salt & Pepper Chips seasoning

  • Mayflower Curry Sauce

  • A pinch of chilli flakes

  • Low calorie spray oil

Directions

  • Preheat your oven to 180 degrees.
  • Cut you potatoes into chip like shapes, then spray some spray oil and sprinkle the JD Seasoning salt & pepper chips seasoning on them until they are evenly coated. Put in the oven for 30-40 minutes, giving them a shake half way through. You can use the code JESSGETS20 for 20% off your order at JD Seasonings!
  • Meanwhile, slice your peppers and cook them in a pan until soft.
  • Add you Quorn nuggets to the oven for 20 minutes.
  • Mix 30g of the curry powder with 130ml of cold water. You can either choose to microwave cook this or in a pan following the instructions on the packet.
  • Remove your chips and nuggets from the oven and mix in with the peppers. Add a sprinkle of chilli flakes.
  • Serve on a plate, pour your curry sauce on and enjoy!
