Loaded Mushrooms

These loaded mushrooms are so delicious! They are great for a low calorie meal, and are filling enough to see me through the day! I usually eat these for breakfast, but have on occasion enjoyed them for lunch or even my evening meal!

Loaded Mushrooms with beans, cheese and bacon

I can always remember simply loving having beans on toast with grated cheese on. It was simple, but so delicious.

I sat and thought about how I could have a similar style of meal and make it lower calorie. As mushrooms are a regular resident on my breakfast plate, I thought I would try and incorporate them in some way.

In this recipe, I have used Portobello mushrooms to act as the toast with my beans and cheese. I figured that there was no harm in throwing a bit of bacon on there as well!

What’s so great about mushrooms

Mushrooms are a staple food in my house. I usually incorporate them in some way or another into nearly every meal. They’re just so easy to cook and just add that little bit of extra speed into a meal. Countries all over the world use mushrooms in lots of dishes and recipes. It seen as the ‘meat’ of the vegetable world.

Mushrooms can have many different benefits. Not only do they taste delicious, but they can help reduce blood pressure, reduce cholesterol, moderate blood sugar and reduce stress among many other things!

For centuries, traditional Chinese medicine has used the medicinal properties of mushrooms to help with their remedies.

Even though mushrooms are made up of about 90% water, a single portobello mushroom can contain more potassium then a banana!

Although I very rarely stray from the mushrooms that you can easily source from your local supermarket, it does fascinate me that there are so many different species of mushrooms. There are even over 30 species of mushrooms that glow in the dark! A chemical reaction called bioluminescence causes the production of a glowing light known as foxfire.

In my previous job, I had a colleague who used to go ‘mushroom hunting’ as a hobby with her partner. She used to tell me all about the different species of mushrooms that she had spotted that weekend. The term ‘Mychophagist’ is the official name for those who collect mushrooms to eat from the wild. If you decide to take up this hobby however, you have to be careful, as there are some species of mushrooms that are inedible, or even poisonous. The sneaky thing about these mushrooms is that they look like the common edible species.

Ingredients

  • 3 Portobello Mushrooms

  • 1/2 tin Baked Beans

  • 2 Bacon Medallions

  • 40g Low Fat Cheese

  • Low Calorie Spray Oil

  • Fresh Coriander

Directions

  • Preheat your oven to 180 degrees.
  • Peel the skin off your mushrooms and spray with your spray oil. Place in the oven for 5-10 minutes
  • In a frying pan, spray with spray oil and cook your bacon. Once cooked, cut up into small pieces.
  • Meanwhile, put the baked beans in a microwaveable bowl and microwave for 1-2 minutes, until hot.
  • Place beans, bacon and cheese over your portobello mushrooms are return to the oven for 5 minutes, until the cheese has melted.
  • Serve with fresh coriander and enjoy!
