Breakfast Waffles

These potato waffles are so easy to make, and are incredibly filling. A great way to start the day and keep you full right through to lunch!

I love potato waffles. They are a very nostalgic food for me. I remember eating them as a child but then for some reason, there were many years where I no longer ate them. I joined Slimming World and I ‘rediscovered’ the amazing potato waffle. Once I have used my healthy B for the day, I quickly realised that bread was eating my remaining calorie allowance. I was looking for a carb filled alternative. While browsing the supermarket, looking for inspiration, that is when I came across an old favourite.

For a moment, I debated the potato smileys (another favourite of mine as a child). I decided that I should at least pretend to have grown up! The potato waffles were instantly put in my shopping trolly and I quickly checked the calories. But let’s be honest, I never intended to return them to the shelf, even if they were high in calorie! Thankfully, at 94 calories each, I now get to eat one of my childhood favourites as part of a cooked breakfast and stay on plan. 

A bit of history…

Did you know? Birds Eye claim to have created the original potato waffle in 1981. They also source all of their potatoes to make them from within 40 miles of their waffle factory. It pleases me greatly that such a big company would use locally sourced produce. As my cousin is a farmer, I am always glad to hear that British farmers are being supported.

Another great thing about the potato waffle is that you really have pretty much any option when it comes to cooking them. Whatever you prefer, you can pretty much do it. They can be grilled, oven baked or barbecued. Personally, I find it easiest to pop them in the toaster for a few minutes. Interestingly, the toasting method made it into the tabloids in January 2020. The Sun reported that we have been cooking potato waffles wrong for years. After 103 hours of testing on 3,000 waffles, it was confirmed that toasting was the quickest method of cooking. Whichever way you choose to make them, you should cook your potato waffles from frozen so you don’t need to think about getting them out of the freezer to defrost. They are certainly easier than preparing potatoes from scratch.

Ingredients

  • 2 Birds Eye potato waffles

  • 1 large egg

  • 20g low fat cheese

  • 1 Heinz baked beans snap pot

  • Low calorie spray oil

Directions

  • Heat a frying pan and spray with spray oil. Crack the egg in the pan and fry it sunny side up.
  • Meanwhile, put your potato waffles in the toaster for 3 minutes.
  • Microwave you baked beans for 1 1/2 minutes.
  • Stack the beans on top of the potato waffles, grate your cheese on and place your fried egg on top.
  • Enjoy this simple but delicious breakfast!
