Chicken Fried Rice Fakeaway

This Fakeaway friendly dish is so quick to make. It is also great for using up any leftovers you may have in the fridge! This chicken fried rice also gives a slight Chinese fakeaway vibe, so it’s also great if you’re trying to battle those cravings! Why ruin all your progress when you can have this instead!

I think one of my favourite things to add to a dish is rice. It is so filling and can be altered in any way you wish, such as adding veg like I did. Alternatively, having it as a base to a delicious sauce is another great way to eat it.

Rice is so easy to season or add sauce to make a completely different flavoursome meal! For this recipe, adding soy sauce gives it that great oriental taste. Adding a bit of spice or herby seasoning would completely change the entire meal!

Following a calorie deficit myself, this is fantastic for having a really filling meal while not needing to worry about going over my calories.

Quorn

If you’re vegetarian, Quorn is probably one of my favourite meat substitutes, as it is generally lower in saturated fat than other alternatives, or meat itself.

For this meal, you can use the Quorn pieces. For 100g of this, which is more than what this recipe requires, there is only 99 calories, and 0.8g of saturated fat.

Taking into consideration that this recipe only requires 75g of Quorn, that would mean that you were only consuming 74 calories, and 0.6g of saturated fat.

But what about protein? A lot of questions that I get asked on a regular basis surrounding being a vegetarian, go along the lines of ‘you can’t possibly get enough protein being a vegetarian’.  

Well, the majority ingredient in Quorn pieces is Mycoprotein (95% in fact).

What is Mycroprotein?

To put it simply, Mycoprotein is a fungus that grows in soil. The word ‘myco’ is another word for fungi, which some would presume means that Mycoprotein is derived from mushrooms, however, this is not the case! The official name for this fungus is Fusarium Venenatum.

The fungus is then fermented to grow Mycroprotein!

To cook this

In my little kitchen, I don’t have much room for large gadgets such as rice makers. I just simply use a good old-fashioned pan of boiling water. If you wanted to make your rice in a rice maker, by all means go ahead! You do you!

For the Quorn, I simply cook this in a pan with spray oil, as this is how the packet instructions state to cook it. It couldn’t be much simpler!

The veg that I use is a steam bag from Birds Eye. I find these so handy as they’re quick and easy to make, reducing my prep time massively! Peeling and chopping fresh vegetables may be more to your taste, which can add a more homely feel to the recipe. Whichever route you decide to take with regards to your vegetables, knowing that you are still getting the great nutrients and extra speed foods is all you need!

Batch cooking

Another thing that I love about this meal is that you can throw it all in a food storage box and be on your way! It’s a great recipe for having for either lunch or evening meal and can be so easily batch cooked to keep you going for days.

Food storage boxes is probably (in my eyes) one of the best inventions out there for busy people or people who simply don’t have the time to cook three times a day seven days a week! You can get some great storage boxes here.

Condensing down a week’s worth of cooking into one day can be so much better to fit your busy lifestyle. You don’t need to worry about what you’re eating next! Knowing that you’re staying on track, because you already know what you’re having for your next meal. Knowing that it’s already made is something that makes peoples week a lot easier when trying to eat well.

This meal has really become a staple in my house. It is so easy to make, and can be batch cooked.

Ingredients

  • 1 Chicken Breast, sliced

  • 75g Rice

  • Mixed veg

  • 1 large egg

  • 2tbsp soy sauce

  • Low calorie spray oil

Directions

  • Start by cooking your rice in boiling water.
  • Meanwhile, spray a pan with spray oil and add your chicken. Cook until completely heated through.
  • Cook the mixed vegetables in the microwave for 3 minutes as per the packet instructions.
  • Once the rice, chicken and vegetables are cooked, combine them into one pan.
  • Crack an egg into the pan and mix in with the rice, veg and chicken until it is a scrambled consistency.
  • Add the soy sauce to season. Serve in a bowl or on a plate and enjoy!
