Why pitta over pizza dough?

Now I’m not going to sit here and tell you that you’re getting the same thing, as you’re definitely not. The pitta bread is smaller than the pizza base, however, the pitta bread allows for the addition for sides to your meal, such as chips or maybe some vegetables.

A pitta history:

Pitta bread can be traced back to prehistoric times. Moreover, it was originally made from wild cereal grains.  However, there is no evidence that there was a ‘pocket’ in those days.

Interestingly, the word ‘pitta’ comes from modern Greek meaning bread, cake or pie. Also, in Ancient Greek the word pikte meaning fermented pastry is similar to ‘picta’ in latin meaning pizza.

Pitta is mass produced these days.  Some production lines can bake batches using 45000kg of flour at a time making thousands of loaves every hour.  Because the ovens are extremely hot (around 800 – 900 degrees)  they only need to be cooked for around 60 seconds.  Then, they cool the pittas about 20 minutes before selling them around the world.

By cooking the pittas in a very hot oven, this makes the water in the dough turn into steam causing the pitta to expand to make a pocket. When the dough collapses, it stays separated allowing us to fill it with whatever we want.
