Japanese Noodle Soup

Japanese food has won the hearts (and stomachs) of people all over the world. Despite Japanese dishes usually including fish and meat, the cuisine was actually once vegetarian! This was due to Buddhism being introduced into their culture in the Kofun period which then meant that it was forbidden to eat meat!

Chopsticks are used to cook, stir, serve and eat Japanese food in the Kofun period, however many people continued to eat with their hands because they couldn’t afford them.

This recipe has a few more ingredients than a lot of the rest of the meals on this website, however, I think that the great thing about oriental food is the mix of incredible flavours!

Ingredients

  • 1tbsp Soy sauce

  • 1tsp Very Lazy Ginger

  • 1tsp Very Lazy Garlic

  • 2 Spring onion stalks

  • 1/2 Carrot, peeled & chopped

  • A few broccoli florets

  • 1/2 Courgette, chopped

  • 1 Baby Bok Choy

  • 100g Shitake Mushrooms

  • 50g Red Cabbage, chopped

  • 1/4 Lime

  • 1 Nest of dried noodles (I use Blue Dragon)

  • 500ml Vegetable stock

  • 1/2tsp Crushed chilli flakes

  • Spray oil

Directions

  • Heat a large pan with spray oil and 1tbsp soy sauce on medium-high heat.
  • Add the garlic, ginger and stir fry this for a minute until softened.
  • Add all the veggies and mushrooms and carefully stir, you might want to add a bit of water if the pan is too dry.
  • Place a lid on the pan and steam for 2-3 minutes.
  • Meanwhile, soft boil an egg for approximately 6 minutes.
  • Mix up the vegetable stock and season with the other tbsp of soy sauce.
  • Add your noodles and veg stock into a pan and cook according to packet instructions.
  • Pour your vegetable stock and noodles into a deep bowl, then add your veggies, spring onions, mushrooms and lime. Top with your soft boiled egg and sprinkle with chilli flakes.
  • Serve and enjoy!
