Stuffed Sweet Potato

Jacket potatoes were always one of those incredibly easy lunches to make. When I became a vegetarian, I struggled to think of ways in which to stuff mine. Before being veggie, I used to top mine with tuna mayonnaise or a massive handful of cheese and loads of butter! Having a sweet potato is just as nice, there are so many fillings you can put in them!

Sweet potatoes were always something that I was never sure about. You’re telling me that it’s just like a normal potato but tastes sweet? Impossible. Having tried them now, I actually prefer them to normal potatoes!

I can’t really remember eating or trying sweet potatoes when I was growing up. It wasn’t really a popular choice for me back then.

Health benefits

Not only does a sweet potato taste like a dessert, but they have some great health benefits! One of the main surprising benefits is that they can help regulate your blood sugars. I always thought that starchy vegetables couldn’t be good for your blood sugar, however, as it turns out, they have around 6.6 grams of dietary fibre in a medium sweet potato, which helps the steady pace of digestion. Research has also shown that sweet potatoes can increase adiponectin in the blood levels of somebody with type 2 diabetes. Adiponectin is a protein hormone which is made by our fat cells. It serves as an important insulin metabolism modifier. Adiponectin is a protein hormone produced by our fat cells, and it serves as an important modifier of insulin metabolism.

Ingredients

  • 1 medium sweet potato

  • 45g feta cheese

  • Handful of spinach

  • Salt & pepper to season

Directions

  • Pierce your sweet potato several times with a fork and cook in the microwave for 5 minutes.
  • Meanwhile, cut your feta cheese into cubes.
  • Once the sweet potato has cooked in the microwave, cut it in half and spoon out the middle into a bowl, leaving the skin.
  • Mix in the spinach and crumble half of the feta into the sweet potato mixture. Add salt and pepper to taste.
  • Spoon the mixture back into the sweet potato skins and crumble the rest of the feta cheese on top. Serve and enjoy!
