Fajita Kebabs

These chicken kebabs are great cooked either in the oven or on a BBQ in the summer!

Fajita Kebabs

Having kebabs on a BBQ is probably one of my favourites for a sunny day. The great thing about them is you can stack them with whatever you want! In this recipe I have chosen to stack mine with peppers as that was all I had in my fridge at the time, but why not add mushrooms and onions too?

Topping your kebabs with a delicious yoghurt drizzle makes all the difference. I mixed my yoghurt with garlic to give it that garlic sauce feel.

Making your own yoghurt

If you’re feeling particularly adventurous, or you consume quite a lot of yoghurt on a weekly basis, then you can actually make your own fat free yoghurt!

To do this, all you need is some fat free milk, and plain unsweetened yoghurt with live cultures such as FAGE 0%

All you do for this is cook the milk in a slow cooker on high for 2-3 hours. While it’s cooling, make sure the yoghurt is at room temperature. Once the yoghurt is warmed and the milk is cooled, mix them together in the slow cooker and whisk together gently. Add the lid back onto the slow cooker and cover with several towels. Leave it to sit for 6-8 hours to ferment, or until it looks jelly like. After this simply put in the fridge and let fully cool and it’s ready to eat!

There are many health benefits of yoghurt such as enhancing digestion and nutrient absorption. Creating your own yoghurt at home is a great way of getting probiotics into your system. Many yoghurts sold in supermarkets tend to contain artificial ingredients and fillers, added sugars, and only a small amount of probiotics.

BBQ

When I BBQ my fajita kebabs, I like to put the sticks in cold water before I stack them ready for cooking. This helps them not to burn when you put them on the grill. Remember to keep turning them so that they cook fully on both sides!

Ingredients

  • 1 Chicken breast

  • JD Seasonings Fajita seasoning

  • 1/4 Red Bell Pepper

  • 1/4 Green Bell Pepper

  • 1/4 Yellow Bell Pepper

  • Handful of salad leaves

  • 1tbsp Fat free yoghurt

  • 1tsp Very Lazy garlic

  • Garlic seasoning (mine is from tesco)

  • 2 Skewer sticks

Directions

  • Preheat your oven to 180 degrees.
  • Slice your peppers into strips.
  • Cut your chicken into small pieces, and put on the skewers, piercing slices of pepper in between them. Save the remainder peppers for topping your salad with.

  • Put the kebabs in the oven or on the BBQ turning them every so often until cooked through (around 20 minutes)
  • For the sauce, mix together the yoghurt and garlic. Once the kebabs are cooked, drizzle this on top.
  • Serve with a side salad topped with your peppers and the rest of the sauce and enjoy
