Who says steak night has to be for meat eaters only?! Enjoy this delicious vegetarian steak & stay on plan in the process!

When I have a pub lunch with my friends, a lot of them order a steak and chips. When I was a vegetarian, I obviously did not. But that is not to say, I don’t like the peppercorn sauce that it often comes with. Luckily for me, Quorn do a vegetarian alternative which provides very similar nutritional values to eating a real steak. Furthermore, it is packed with mycoprotein (81%) and is gluten free, just like a real steak.

Peppercorn sauce

One of my favourite parts of this meal was the peppercorn sauce In fact, it was creamy and delicious. Moreover, it was very simple to make as you just pop it in the microwave from frozen. This Slimming World sauce is exclusive to Iceland. It comes in a 350g pot and only costs £1.50. Best of all, it’s syn free.

I know not everyone lives close to an Iceland. Also, some people prefer to make their own sauces. So if you prefer, you can make the sauce from scratch in around 35 minutes using Slimming World’s recipe.

Chips

I have talked numerous times on my blog about homemade Slimming World chips and their benefit. Firstly, they are syn free. Asparagus

At the time of writing this recipe, asparagus is one of the many speed vegetables that should make up around one third of your plate. Admittedly, on this occasion, I have monopolised on the fact that they are long and take up a lot of space on the plate. I promise that the rest of my meals on this day had extra speed on the plate! If asparagus is not your thing though, there are plenty of other speed vegetables that you could substitute it for. Perhaps you could try tomatoes, spinach, or green beans. All of which would have similar benefits of keeping you fuller for longer and help boost your weight loss.

Ingredients

  • 1 Quorn peppered steak

  • 100g mushrooms

  • 250g Potatoes (I use Maris Piper)

  • Handful of asparagus

  • JD Seasonings chips & wedges seasoning

  • 100g Slimming World Peppercorn Sauce (from Iceland)

  • Pinch of salt

  • Low calorie spray oil

Directions

  • Preheat your oven to 180 degrees.
  • Cut your potatoes into chip like shapes, spray with spray oil and sprinkle with the JD Seasonings chips & wedges seasoning until evenly coated. Put in the oven for 30-40 minutes, giving them a shake about half way through. You can use the code JESSGETS20 for 20% off your order at JD Seasonings!
  • Meanwhile, put the peppercorn sauce in the microwave as per the packet instructions.
  • Spray a frying pan with spray oil, and put on a high heat. Cook the Quorn steak until heated through.
  • Slice the mushrooms and put them in the frying pan with your steak.
  • In a separate pan, boil the asparagus in salt water for 5 – 7 minutes.
  • Serve your steak, chips and asparagus on a plate. Top with the peppercorn sauce and enjoy!
