Curry & Cauliflower Rice

Hands down one of my favourite meals which is so quick and easy to make! I used to always think that making a curry would be such a huge effort as I always hear about them taking hours! This method however, only takes 10 minutes!

When I started my weight loss journey, I thought that things like curry were simple off the menu now. However, since I discovered mayflower curry sauce, that has changed!

This is possibly one of the best curry sauces I’ve tried that tastes just like the takeaway!

As there are two methods of cooking this, you have a couple of options for which suits you. Myself, I tend to make it in a pan as I can usually get a smoother consistency. The microwave method is also easy, however, in a pan it’s easy to then just add the rest of the ingredients in with it to cook.

As a fakeaway, I’d say that this could easily replace the usual Saturday night takeaway, and it’s a lot cheaper too!

Ingredients

  • 2 bags of steamed cauliflower rice

  • 100g Mushrooms

  • 50g Frozen peas

  • 30g Mayflower curry sauce powder

  • 1 Chicken breast, sliced

  • Frylight

Directions

  • Heat a frying pan to medium-high heat. Spray with spray oil and add your chicken.
  • Slice your mushrooms and add to the chicken once it is nearly cooked.
  • Mix your Mayflower Curry Sauce as per the instructions. I worked out that for 1 portion you need 130ml water. It is up to you whether you microwave or pan cook this.
  • Add the peas to the chicken and mushrooms and mix together until the peas are cooked.
  • Add the cooked Mayflower Curry Sauce to the rest of the ingredients and combine.
  • Microwave your cauliflower rice as per packet instructions
  • Serve your cauliflower rice on a plate and top with the curry.
