Sweet Potato Toast

This delicious breakfast is so filling & such an explosion of flavours, the sweet potato with the avocado isn’t a combination I thought would work, but believe me it does! You’ll be wanting it day after day like me!

Okay so I can’t quite believe just how long it’s taken me to try sweet potato toast… As I’m writing this in November 2021, this morning was the first time!! I’d seen loads of other bloggers rave about it and I always thought that it sounded nice, but never got around to trying it!

I think it’s fair to say that this combination is going to be a firm staple in my future meal plans!

Ingredients

  • 200g Sweet Potato

  • 1/2 Avocado

  • 15g Feta Cheese

  • 30g Sun Dried Tomatoes

  • Rocket

Directions

  • Put your sweet potato in the toaster, toast until the sweet potato is soft (this may take a few rounds)
  • Meanwhile, mash your avocado
  • When the sweet potato is done, put the avocado on top, followed by the rocket
  • Layer the sun dried tomato on top of the rocket and sprinkle the feta on top.
  • Serve & enjoy!
