Biscoff & banana is such a mouth watering combination. Adding them on top of yummy pancakes makes for a delicious breakfast!

Pancakes

Pancakes were always a breakfast which I had longed to eat more of, without it having to be shrove Tuesday. Now that I count calories, I think I eat them at least once a week!

Pancakes are such a delicious sweet treat. Did you know that they were around over 30,000 years ago during the Stone Age? They in fact found pancakes in the stomach of Otzi the Iceman’s remains which dates back 5,300 years.

The name ‘pancake’ originated during the 15th century. Before that, they were referred to as Indian cakes, journey cakes, and griddle cakes among others!

Shrove Tuesday

I sometimes wondered why we had one dedicated day for pancakes. Why was that the choice of food for shrove Tuesday?

Well, it turns out that the reason we eat pancakes on shrove Tuesday dates all the way back to 600 AD! This was when Pope St Gregory banned Christians from eating all kinds of meat and animal products during Lent. Pope St Gregory then told St. Augustine of Canterbury (a founder of the Christian church in southern England) that he must enforce the same fasting rules in England.

It was this rule that meant thousands of Christians then decided to make pancakes to use up their supply of eggs, milk and butter in preparation for Lent!

This tradition then spread throughout Europe, and in France they made waffles, crepes and something called a king cake to use up their dairy products.

Bananas

Did you know that the banana is one of the most consumed fruits in the world? In fact, it is constantly battling it out for the top spot with the tomato. Amazingly, 114.13 million metric tons of bananas are consumed each year, while the production of tomatoes is 170 million metric tons. Even though a tomato is scientifically a fruit, not many people think of it that way. I think that makes the banana number 1 in my eyes! 

Bananas come in a variety of shapes, sizes and colours but yellow bananas are most popular here in the UK. In fact, we consume a staggering 5 billion bananas every year. Most of these are imported from Latin America however India is actually the largest producer of bananas in the world. 

So why do we love bananas?

Well, bananas are incredibly tasty! Not only that but they have a number of health benefits too. Bananas are high in potassium, have plenty of vitamin C, vitamin B6 and various antioxidants and they contain a fair amount of fibre too. They are reasonably low in calories, having around 105 calories per banana and contain almost no fat. All in all, they are a great snack if you are feeling peckish or the perfect topping for your pancakes!

Did you know?

Even though here in the UK, most of us discard the banana’s peel, in some countries it is common to eat the skin. Apparently the skin has high amounts of vitamin B6 and B12, as well as magnesium and potassium. If you’re thinking of trying the skin though, it is important to wash it very thoroughly before eating to remove any pesticides that may have been sprayed at the banana plantation. 

If you’re not going to eat the skin, there are other uses for it before you throw it in the bin. It actually contains an anti-inflammatory agent so if you have any midge bites, you can use the peel to calm your itchy skin.  Also, the potassium found in bananas is a key ingredient in shoe polish! One article I read suggested you peel your banana and use the inner lining of the skin to rub all over your shoes then buff up afterwards with a soft cloth. I’m not sure I feel too excited about having banana all over my shoes so don’t think I’ll be testing it out any time soon!

Ingredients

  • 40g Oats

  • 2 Eggs

  • 100g Fat Free Greek Yoghurt

  • 1tsp Vanilla Extract

  • 1tbsp Sweetener

  • 3/4tsp Baking Powder

  • Low Calorie Spray Oil

  • Toppings
  • 1 Banana

  • 15g Biscoff Topping Sauce

  • Biscoff Biscuit

Directions

  • Blend your oats in a blender until they form a powder.
  • Mix the rest of the pancake ingredients with the blended oats in a jug until they’re smooth.
  • Spray a frying pan with spray oil and place on a medium heat. Pour some of your mixture in and cook until the pancake starts to get bubbles.
  • Flip the pancakes once you are able to slide the spatular under them easily and cook the other side.
  • With this mixture I usually make 5 good sized pancakes.
  • Chop your banana and add on top of the pancakes. Drizzle the Biscoff Topping Sauce & add a whole Biscoff Biscuit or crumble on top and enjoy!
