Fajita night? Why not switch it up with this delicious one pot fajita pasta dish. It’s definitely a winner within the family! Not only that, but with this one pot method, washing up is kept at a minimum!
One of my favourite nights growing up was fajita night, and it still is to this day! As a person who lives alone, I very rarely get through a whole pack of fajita wraps without having the freeze them. I wanted a way to keep that delicious fajita flavouring, and turn it into a batch cook that I could freeze and enjoy at any time I wanted.
Personally, the next best alternative carb for me from bread is pasta. So having this one pot fajita pasta dish has been a game changer!

One Pot Fajita Pasta

2 Large Chicken Breasts
1/2 Red bell pepper
1/2 Green Bell Pepper
1/2 Yellow Bell Pepper
1/2 Red Onion
500ml Chicken Stock
1/2 Pot JD Seasonings Fajita Seasoning (Use code JESSGETS20 for 20% off!)
180g Dry Penne Pasta
2tbsp Sour Cream
60g Cheddar Cheese, Grated
Directions
- Cut your chicken into bite size pieces
- Prepare your veg by deseeding and slicing your peppers, and chopping your onion as you like it.
- Cook the chicken in a deep frying pan until browned.
- Add the onions & peppers cook until soft.
- Add your fajita seasoning and stir until all the ingredients are coated evenly.
- Add your stock cube to the pan along with the dry pasta. Make sure that the pasta is covered in the liquid.
- Turn your pan down to a medium heat and leave to simmer until the liquid has been absorbed.
- Serve your meal and top with 1tbsp sour cream & 30g grated cheese per portion.
