Where do casseroles come from?

Did you know, that the word ‘casserole’ comes from the French word meaning ‘sauce pan’. The casserole was invented by the French Canadian immigrant Elmire Jolicoeur in 1866, however the oldest recipe for a casserole appears to be a form of macaroni and cheese that was written down in Latin, this was back around the year 1250!

In the 1950s smaller home kitchens, the availability of lightweight oven-proof cookware and the greater availability of canned foods meant that the casserole was a simpler, easier and cheaper way to use leftover foods to feed the whole family.

Slow cooker casseroles

The great thing about casseroles, is that they are really easy to load all the ingredients into a slow cooker ion at the morning before work, and then leave it and come home to a delicious smelling home as well as a hearty meal! They are also great for making a large batch of, then portioning out and freezing so you have you meals for the entire week! You could also set the slow cooker going in the evening before bed, and wake up to the beautiful smell of home cooked food, ready to take to work or keep for your lunch/evening meal! There’s nothing in the world that quite beats it for me!

Ingredients

  • 1 full pot of JD Seasonings Sausage Casserole Kit

  • 4 Low Fat Sausages

  • 1 Red Onion

  • 100g Mushrooms

  • 1 Yellow Pepper

  • 250g Passata

  • 1 400g Tin Chopped Tomatoes

  • 1 tbsp Worcestershire Sauce

  • 1 tsp Sweetener

  • 300g Rigatoni

  • 120g Cheddar Cheese

Directions

  • Fry the Sausage in low calorie cooking spray until browned
  • Add the red onion and garlic and fry for a further 3-5 minutes.
  • Add the mushrooms and cook for another 5 minutes, followed by the yellow pepper.
  • Add in the passata, chopped tomatoes, Worcestershire sauce and sweetener and mix, then add in the Sausage Casserole Kit and mix well. Simmer for around 20 minutes, until thickened.
  • While the sauce is simmering, cook your pasta according to the packet instructions.
  • Mix the cooked pasta and sauce together and pour into an oven-proof dish. Top with your grated cheese and bake for 15 – 20 minutes.
  • Serve & enjoy!
