This delicious tomato based recipe is perfect to feed a family, or to batch cook and portion out for dinners throughout the week! Sometimes, eating chicken on it’s own can become quite boring and repetitive (in my opinion) however, simply wrapping it in bacon creates a whole new dish, and makes the old boring chicken, something interesting and delicious!

You can pair this meal with some veg of your choice, or if you fancy, make some home made chips to pop on the side to enjoy!

The tomato and veg base is great for adding extra flavour to the meal, as well as adding a sauce to dip your chicken and side into! Of course, you could have this meal on it’s own if you prefer, there’s plenty of protein to keep you full until your next meal!

The cheese on top also makes a welcome appearance, as (again, in my opinion) adding cheese to any dish makes it 10x better!

If you fancied something a little less bulky than the bacon, you could switch that out with some parma ham instead! Another personal favourite of mine is to stuff the chicken with a cream cheese before wrapping it, so you get a delicious surprise when cutting into it once cooked! If you’re trying to keep it low calorie, the Philadelphia lightest is great for this as there is only 29 calories per 30g, so you can enjoy your cheesy dish without the guilt!

Ingredients

  • 2 Onions

  • 1 Carrot

  • 3 Garlic Cloves

  • 1 Red Pepper

  • 200g Mushrooms

  • 1 Pint of Passata

  • 1/2 tsp Paprika

  • 25ml Balsamic Vinegar

  • 1/2tsp Salt

  • 3 Chicken Breasts

  • 6 Rashers of Streaky Bacon

  • 30g Cheddar

  • Spray Oil

Directions

  • Spray you pan with oil and cook the onion and carrot until they’ve started to brown
  • Add the pepper and garlic and cook for a further 5 minutes before adding the mushrooms.
  • Add the Passata, balsamic vinegar and salt.
  • Reduce to a medium heat and cover, stirring occasionally until reduced and thickened
  • Meanwhile, preheat your oven to 200 degrees centigrade
  • Cut the chicken breasts in two lengthways and wrap each piece in 1 or 2 rashers of streaky bacon.
  • When the sauce is cooked, spoon into an ovenproof dish or dishes, reserving a little.
  • Arrange the chicken on top of the sauce and spoon over the remaining sauce.
  • Top with grated cheese and cook in the over for 20 minutes
