Honey Miso Noodles

Another fairly new favourite of mine! These honey miso noodles are a great batch cook! If you want to see me making these, I have a whole batch cooking video on YouTube you can watch here!

I must say, Miso is something that I haven’t tried too much before early 2022, and I wish I hadn’t waited so long! The flavours that it provides to your meals makes so much difference, I no longer have it missing from my pantry!

Did you know that Miso is made by fermenting soy beans? To get the unique flavour, it can be fermented from anywhere between a couple of months to years! The longer that it is left to ferment, the darker the colour of the miso paste, and therefore the more intense the flavour!

Only a tablespoon of miso can add some serious flavour to your meal, but not only that, it’s packed with probiotics which are healthy bacteria which can boost your immunity, promote a healthier gut and even help alleviate some of the symptoms of depression and anxiety!

Honey Miso Noodles

Ingredients

  • 40g Honey

  • 20g Dark Soy Sauce

  • 30g Miso Paste

  • 1/2 Chicken Stock Cube (in 40ml water)

  • 4 Nests of Noodles

  • 1/2 Onion

  • 200g Carrot

  • 200g Courgette

  • 2 Spring Onions

  • 1tsp Garlic Powder

  • 700g Chicken Thighs

  • 1tsp Sesame Seeds

  • Spray Oil

Directions

  • Start by combining the honey, soy sauce, miso paste and chicken stock together in a bowl. This will be your sauce.
  • Preheat your oven to 200 degrees centigrade
  • In a large bowl, add your chicken, garlic powder, and 1/4 of the sauce mixture into a large bowl and combine well.
  • Once covered, put the chicken onto a large baking tray and cook in the oven for 30 minutes. Once done, bring out the oven and cut into small pieces.
  • Cook your noodles as per the packet instructions, and once they are done, strain and keep them in cold water until we’re ready to use them.
  • Chop your veg, I like to have my onions small, the courgette julienne into thin strips and then use a veg peeler to peel the length of the carrot into ribbons.
  • Spray a large skillet with your spray oil, then add in the onions, Cook until browned.
  • Add your courgette and cook until browned.
  • Lastly, add the carrots and garlic into the pan and cook for a few minutes until the carrots are softened.
  • Once cooked, take a large bowl and combine the chicken, noodles and your veg. Stir in the remaining sauce.
  • Serve into 4 equal portions and enjoy!
