It can be difficult to find something for lunch. Often lunch is that meal that needs to be packed up and taken to work. So it ends up being bland and boring. Nuggets are a great way to make lunch less dull and in particular, the Quorn nuggets will make you feel like you popped out to McDonald’s for a cheeky drive-thru!

Wraps

Wraps are a great idea for lunch. They are incredibly handy for an alternative to a sandwich. Alternatively, you can switch to something like the Hovis Nimble bread, is lower calorie, but let’s face it, they are basically half the size so you still get a pretty small sandwich.

In all honesty, I tend to overstuff mine and then struggle to close them up. So half the time, I’m eating a deconstructed wrap with a knife and fork. But if you can control yourself, they can be nice and tidy lunch items which are handy to eat at your desk or on the go.

Lo-Dough bases are another alternative that I have recently discovered. These wraps are only 39 calories each, so you can save your calories for treats later if you want! The only downside to the Lo-Dough base is the fact that they are only online. Personally, I like to buy several packets of wraps and freeze them so that I don’t need to buy them as often.

Lo-Dough also offer a subscription service, so if you basically live off wraps like I do, then this might be a good option for you.

What to put inside

There are so many different combinations of what you can put inside and this is a great time to fill up on low calories food such as salad or veg. When I want my wrap to close, I tend to stick to spinach and peppers, along with 4 nuggets. The 4 is a bit of a squeeze but doable. However, sometimes I also add onions and sweetcorn. This is when I end up having to use a knife and fork. I bet you have lots of great ideas for extra food to add in. So if you try something different, comment below to let me know.

Ingredients

  • 4x nuggets

  • 1/4 Green Bell Pepper

  • 1/4 Red Bell Pepper

  • 1/4 Yellow Bell Pepper

  • x1 Lo-Dough Base

  • Handful of Spinach

  • 1 tbsp lighter than light mayo

Directions

  • Preheat your oven to 180 degrees.
  • Put nuggets into the oven for 15 minutes.
  • Meanwhile, slice your mixed peppers. and cook them until soft.
  • Prepare your Lo-Dough base by spreading your mayo and putting your spinach on.
  • Once the peppers and nuggets are cooked, put these on top, wrap up and enjoy!
