I’m going to be honest, KFC was never somewhere that my parents ever took me when I was a child. It was always known as being incredibly greasy and high calorie, though I don’t think it’s much different to any other fast-food chains these days!

I only really discovered KFC during lockdown in 2020, and that was only because it was closed to the public due to the Coronavirus. That meant that people had started making their own versions of it! I saw an influx of posts on Instagram with the #kfcfakeaway. I then realised just how easy it would be to re-create the Zinger burger that was on the menu!

Doritos

Using Doritos as the crust of your chicken is a great alternative to the deep-fried chicken you would get from the drive-thru! The chilli heatwave gives it that delicious kick of the Zinger burger you all know and love! Did you know though, that Doritos were in fact invented by a restaurant named Casa de Frito in Disneyland back in 1966? The restaurant was advised by their tortilla supplier that instead of throwing out old stale tortillas, to start frying them and selling them as crisps instead! They then named them Doritos!

Once Doritos became more popular, they moved the production to a bigger factory in Tulsa and began selling them worldwide!

Directions

  • Preheat your oven to 180 degrees.
  • Cut your potato into chip like shapes, then spray with spray oil and coat with the JD Seasoning’s Chips & Wedges Seasoning. You can use the code JESSGETS20 for 20% off your order at JD Seasonings!
  • Cut your chicken breast to the size that you’d like it, then crack an egg into a bowl and whisk briefly.
  • Empty 15g of the Doritos into a bowl and crush them using your hands.
  • Coat your chicken breast in the egg and then roll it in the crushed Doritos.
  • Put the chicken and chips into the oven for 30-40 minutes, turning everything half way.
  • Boil your corn on the cob for 5-7 minutes
  • Mix the gravy granules per packet instructions.
  • Assemble the salad, chicken burger and cheese slice into the bun and plate up the rest of the food.
  • Serve and enjoy!
