Fajita Seasoned Salad

I’ve never been a huge fan of salad. The thought of eating a salad to lose weight used to completely put me off trying to eat better. I simply found them boring and tasteless. Little did I know that if you just add the things you like to it with the right seasoning that it could be a complete game changer! I now find myself having this for lunch at least twice a week!

Summer Salad

When I think back to the first time I tried to eat healthy, the main thing I would dread was the thought of eating salads all the time. Because back when I was a teenager, this was just the normal idea for ‘how to lose weight’.

I always knew that adding salad leaves to my meal plan would boost my weight loss as they are speed food. I have never been a fan of the majority of salad dressing either, which ultimately made my salad eating days an overall disaster.

The salad that I have written this recipe for is the only salad that I eat and enjoy. I think that’s mainly because my ‘dressing’ is cheese. But hey, if it means that I can boost my weight loss and actually enjoy the lunch I’m eating, then why not? I use my cheese as one of my healthy extra A choices, so really I can’t go wrong here!

Where did salad come from?

History tells us that salad was eaten by ancient Greeks and Romans.  They were originally just greens and a dressing.  They then added more ingredients over time.  Recipes varied depending on the region.  Why is it called salad?  The word comes from ‘sal’ meaning salt which was almost always used in the dressing.  The romans were particularly keen on salad, the recipes used were not much different from what we eat today – just a collection of raw vegetables.  They almost always used a dressing of some sort brine, vinegar or oil.  The latin words used literally meant ‘salted herb’

Medical practitioners at the time believed that raw vegetables moved easily through the system and did not cause obstructions so should be eaten first.  Others said that the vinegar spoiled the taste of the wine and should be eaten last.  When Rome fell, salads became less important although raw vegetables were eaten on fast days for medicinal purposes.

Ingredients

  • 1 Chicken breast

  • 2 bacon medalions, chopped up

  • 1 large egg

  • 40g low fat cheese

  • Handful of salad leaves

  • JD Seasonings fajita seasoning

  • Low calorie spray oil

Directions

  • Spray a pan with spray oil and cook your chicken. Add the bacon when the chicken is nearly done.
  • Boil a pan of water and add your egg. To soft boil I leave it in for 6 minutes and then put into a bowl of cold water once done.
  • Meanwhile, grate the cheese finely (You get way more when you grate it finely!)

  • Serve your chicken and bacon on top of a bed of leafy salad and top with cheese and your soft boiled egg.
