Taco Stuffed Omelette

This stuffed omelette is great if you want something easy and low calorie! This slimming friendly meal is brilliant comfort food that only takes 10 minutes to make!

You can pretty much do anything with an omelette and I think that is one of the reasons why they are so loved. As you can see in this recipe, I have decided to stuff mine with taco beans and cheese!

Other things you can do with your omelette can include using it as a wrap if you don’t like wraps or don’t want to use bread. For instance, I’ve also got a recipe for a breakfast omelette wrap that you may want to look at!

Where did omelettes come from?

It is unknown who invented the omelette.  Some say it was the French while others think it was the Romans.  The Roman theory came about because they used sweetened honey in their recipe. Also, they called it “ovemaele” which is similar to an omelette. However, the first written mention of an omelette is in a French cookbook written in the late 17th century. This is where the  French claim comes from. The story goes that Napoleon Bonaparte spent the night with his army in a small French town. An innkeeper served him an omelette. He immediately ordered that all the eggs in the town to be gathered and an omelette be made that was large enough to feed his entire army! No one really knows if this is true but the town of Bessieres, France does try to recreate this feat.

The Japanese also like their omelettes, they call them Tamagoyaki (rolled omelette) but usually have them as a side dish, not the main one. Japanese omelettes are generally sweeter than western ones and they are much prettier!  They use ketchup to draw pictures on them.

Turkey produced the world’s largest omelette. 80 chefs used 110,000 eggs and a 10m round frying pan to make it!

Ingredients

  • 2 Large Eggs

  • 1/2 Tin of taco mixed beans

  • 40g Mozzarella, grated

  • Low calorie spray oil

Directions

  • Spray a frying pan with spray oil and turn on to a high heat.
  • Whisk together your eggs, season as you like them and put into the frying pan.
  • Turn the heat down to a low-medium heat and cook your omelette until done.
  • Put the mixed taco beans into a microwavable dish, and microwave for 3 minutes.
  • Put half the mozzarella onto the omelette, followed by the mixed taco beans.
  • Put the rest of the mozzarella on top of the taco beans, then fold the omelette in half, then in half again.
  • Serve on a plate either on its own or with some salad!
