Breakfast Omelette Wrap

I love breakfast, and I love wraps! You can put just about anything in a wrap and make in a delicious on the go meal. For those days where I don’t want to eat bread, I simply make the wrap out of an omelette!

Eggs contain a little bit of almost every nutrient you can need which is unsurprising because they were created to turn a single cell into a chick.

Eggs are an excellent source of protein. There is approximately 6g of protein in each egg! This makes them very filling. More than half of the protein is found in the egg white, and the egg white has less fat in than the yolk. This is why you often find body builders just eating egg whites, rather than the full egg.

Interestingly, it is dependant on what the chicken is fed as to how nutritious the eggs are. So next time you’re buying eggs, make sure you try to get free range eggs.

Why free-range?

Not only is it just nicer to the chickens to allow them access to the outdoors, but there have been some scientific findings that free-range eggs contain a quarter less saturated fat, a quarter to a third less cholesterol, two-thirds more vitamin A, three times as much vitamin E, and twice as much omega-3 fatty acids. These are only a few of the nutritional benefits of free-range eggs!

You will notice that free range eggs tend to have a more rich orange colour to their yolks. This is due to the availability of the birds to roam outside and eat insects and flowers, not just the grains they are fed by the farmer.

The perfect omelette

Over the years, I’ve struggled to get a good omelette that wasn’t either burnt or fell apart in the pan. After many attempts to get this right, I’ve discovered the perfect method that works for me!

First, I heat my pan to high heat. I only use 2 eggs for my omelette as any more tends to make the omelette too thick and fall apart when trying to use it as a wrap. Once my pan is hot with spray oil in, I put my beaten eggs in and then immediately lower the heat. Once I’ve made sure that the eggs cover the base of the pan, I just simply leave the omelette to cook. One mistake I used to always make was to constantly fiddle with it! Turning up the sides or flipping it over! When you cook it like this, that isn’t necessary. If you turn the heat down right away, the bottom won’t burn! Once the omelette is ready, you literally serve on a plate and put your fillings in, like a fajita wrap.

Ingredients

  • 2 large eggs

  • 1 Bacon Medallion

  • 1 Low Fat Pork Sausage

  • 1 hash brown

  • Salt & pepper to season

  • Low calorie spray oil

Directions

  • Preheat your oven to 180 degrees.
  • Put your sausage and hash brown in the oven for 20 minutes, turning half way.
  • Meanwhile, whisk you eggs and mix in chopped bacon, or alternatively, cook the bacon separately in a frying pan and have it inside the wrap. I like mixing mine in with the egg!
  • Spray a frying pan with spray oil and cook your omelette on a medium-high heat. Flip if you wish or leave to cook through.
  • Once the sausage and hash brown are ready, place in the middle of your omelette and wrap up!
