Taco Stuffed Peppers

I love these stuffed peppers because they are really simple and you can put pretty much whatever you want in them. When I need a low calorie meal, this is how I stuff mine. 

Mixing meat free mince with the Taco Mixed beans really gave the recipe a nice kick to it. I think that the sweetness of the peppers with the slight spice is a nice balance.

Quorn Mince

I’d say that while growing up, mince was probably one of my least favourite foods. I can remember meal times being a constant battle for my mum (sorry!). As I grew older, I think I got a little less fussy when it came to what food was put in front of me, however I still wasn’t a fan of mince.

Since becoming a vegetarian, I thought I’d try the Quorn mince just to see what it was like. I actually prefer it a lot!

I also like how you can use mince in loads of different meals, and it taste completely different. Why don’t you try the bolognese recipe i’ve made using it here.

Peppers

It wasn’t until quite recently that I learnt the difference between the colours of peppers. What I should say, is that there isn’t really much of a difference at all! Red, yellow, green and orange peppers are in fact all the same kind of pepper, but just at different stages of ripeness! The green pepper is unripe, and the red pepper is fully ripe, with the orange and yellow peppers being the ‘in between’ stages.

Did you know as well, that as the peppers ripen, their health benefits change as well? Red peppers are the ones that pack the most nutrition, as they have been on the vine the longest. Comparing green peppers to red ones, red peppers have almost 11 times more beta-carotene (good for your skin & immune system), and 1.5x more vitamin C.

I think it’s fair to say – mind blown.

The sauce that the Taco Mixed Beans come in is delicious! I’m not one for huge amounts of spice, but I can tolerate a little. These are just the right heat for me to give them a nice kick. You can also buy these from Aldi!

Ingredients

  • 1 x Bell Pepper (colour of your choice)

  • 250g 3% fat beef mince

  • 1/2 Tin Mixed Taco Beans

  • 10g low fat cheese

  • Salt and pepper

  • Chopped fresh coriander

  • Low calorie spray oil

Directions

  • Preheat your oven to 180 degrees. 
  • Heat your mince in a pan until it is fully cooked. Season with some salt & pepper to taste. 
  • Add half of the tin of mixed taco beans and leave to simmer. 
  • Meanwhile, cut your pepper in half and deseed. 
  • Spray your peppers with spray oil and place them on a baking tray in the oven for 10 mins to soften. 
  • Once the peppers have softened, remove and spoon in your taco mixture. 
  • Return to the oven for 5-10 minutes. 
  • Once they are cooked, sprinkle your cheese over the peppers and return to the oven until the cheese is melted. 
  • Remove from the oven and serve with some fresh chopped coriander. 
  • Enjoy a guilt free lunch!
