1 Wholemeal Toasting Muffin
2 Eggs
3 Cherry Tomatoes
Handful of Spinach
Directions
- Whisk your eggs and scramble them in a pan.
- Meanwhile, cut your toasting muffin in half and pop in the toaster until crispy
- Slice your tomatoes up and add into your scrambled egg, along with the spinach
- Mix until the spinach has wilted
- Serve on top of your toasting muffin, and enjoy!
