Ingredients

  • 1 Wholemeal Toasting Muffin

  • 2 Eggs

  • 3 Cherry Tomatoes

  • Handful of Spinach

Directions

  • Whisk your eggs and scramble them in a pan.
  • Meanwhile, cut your toasting muffin in half and pop in the toaster until crispy
  • Slice your tomatoes up and add into your scrambled egg, along with the spinach
  • Mix until the spinach has wilted
  • Serve on top of your toasting muffin, and enjoy!
